Recipe Rescue: Turn Your Leftovers into Something Delicious

Here are a few of our go-to flexible, waste-busting recipes you can make from bits and bobs in your fridge or pantry:

🥕 Veggie Fritters

A fridge clean-out miracle.
Grate any hard veggies (like carrot, potato, zucchini, parsnip), chop up soft ones (like spinach, corn, leftover roast veg), and mix with:

  • 2 cups of veg

  • 1 cup flour (gluten-free works too)

  • 2 eggs

  • Salt, pepper, herbs, onion or garlic if you've got it

Pan-fry until golden. Serve with chutney, yoghurt or whatever’s hanging out in your fridge door. They freeze well, too!

🍚 Leftover Fried Rice

Cold rice + whatever you've got = dinner sorted.
Sauté onion, garlic or spring onion in a hot pan, toss in chopped leftover veg or protein, and add your cold rice.
Splash in soy sauce, sesame oil, or a bit of vinegar for zing.
Top with a fried egg if you're feeling fancy.

🌮 Leftover Roast Tacos

Got a bit of leftover roast meat or veg? Shred it up, toss with some spices or sauce, and wrap it in a tortilla or lettuce leaf.
Top with chopped herbs, pickled onion, or a dollop of yoghurt. Fast, flexible, and endlessly tasty.

🍞 Bread Rescue Pudding

Old bread? Don’t bin it—bake it!
Tear stale bread into a dish, pour over a mix of:

  • 2 eggs

  • 1.5 cups milk

  • A bit of sugar, cinnamon, and vanilla

Add fruit (fresh, frozen, or stewed), let it soak, then bake until golden. It’s humble, homey, and incredible with a drizzle of cream.

🍲 Soup from Scraps

Keep a container in your freezer for onion skins, celery tops, carrot ends, herb stalks, etc.
When it’s full, simmer it all down into a rich veggie stock.
Blend with roast veg, lentils or beans for a hearty soup that costs next to nothing and feels like a warm hug.
