An Apple a Day… Does Way More Than You Think
Autumn is apple time, and at Happy Scraps, we’re deep in the sweet-tart swirl of it.
A recent chat on ABC Radio this past Wednesday got us thinking about just how many ways apples show up in our kitchen—and inspired us to share some of our favourite, slightly out-of-the-box apple ideas with you.
Because apples aren’t just for pies and lunchboxes—they’re one of the most versatile fruits in the kitchen and in the compost. Here’s how we’re turning this season’s bounty (and its scraps!) into something delicious, surprising, and zero-waste.
1. Apple & Sage Pork Sausage Rolls
AKA: The Best Thing That Ever Happened to Pork Mince
Forget your average servo sausage roll. These ones are packed with juicy apple, aromatic sage, and a little mustardy swagger. They're golden, flaky, and just fancy enough to make your friends think you’re a genius. Perfect for parties, picnic baskets, or lazy Sunday snacking.
Top tip: Grate your apples with the skin on—adds colour, nutrients, and saves you peeling time.
Scrap smart: If you do peel, save those skins for…
2. Savoury Apple Peel Dukkah
AKA: The Zero-Waste Sprinkle You Didn’t Know You Needed
We took dried apple peels, roasted nuts and seeds, and some fragrant spices, and turned them into the ultimate topping. This dukkah is sweet, savoury, and smoky all at once. Sprinkle it on roast veg, hummus, cheese boards, or even avocado toast if you’re feeling trendy.
It’s like fairy dust, but make it edible and eco-conscious.
Bonus: Your kitchen will smell like a Moroccan spice market and an orchard had a baby.
3. Rustic Apple Galette
AKA: The Lazy Pie That Everyone Thinks Is Fancy
This galette is the rustic cousin of the tart—and honestly, she’s the cool one. A golden, free-form pastry crust cradling warm, cinnamon-kissed apples. Serve it warm with a scoop of vanilla ice cream or cold with strong coffee. Either way, it’s dreamy.
The twist? We don’t fuss about perfection. A few bruises? No biggie. That’s just more flavour.
Scrap bonus: Leftover peels and cores can go into homemade apple syrup or vinegar—waste not, sip later.
So What’s the Core Message Here?
Apples are having their moment—and they deserve it. Whether you’re rolling them into flaky sausage pastries, blitzing the peels into dukkah, or letting them shine in a rough-around-the-edges tart, there’s no shortage of ways to honour the whole fruit.
At Happy Scraps, we say:
“Every peel has a purpose, every bite tells a story.”
And this autumn, our story is apple-shaped.
Got a basket of wonky apples and not sure what to do with them? Come cook with us. Or better yet, follow us for more no-waste, full-flavour ideas that turn the humble into the hell yeah.
